80/20
About This Experience
80/20 is named after its founding rule: at least 80% of every dish must come from Thailand. Chef Saki Hoshino and Chef Napol 'Joe' Jantraget run it out of a converted shophouse in Charoenkrung, in the cluster of art galleries and indie bars that has become Bangkok's coolest food district.
The menu is small, fermentation-heavy and constantly changing: koji-aged proteins, hand-pressed Thai oils, foraged herbs, house-made vinegars, Thai charcuterie. There's a strong Japanese sensibility behind the Thai ingredients, courtesy of Chef Saki's pastry training.
It is one of the most distinctive Modern Thai kitchens in the country, and probably the most exciting tasting menu in Charoenkrung.
Why It's Special
A radical 80% Thai sourcing rule, a fermentation lab in the kitchen, and one of Bangkok's most quietly inventive tasting menus.
