Aksorn

Bangkok, Bangkok

About This Experience

After leaving Nahm, David Thompson — the Australian chef who arguably did more than anyone to preserve disappearing Thai recipes — opened Aksorn on the fifth floor of Central: The Original Store, a 1950 building that began life as Thailand's first imported-book retailer. The name means 'letters' or 'characters,' a nod to the building's literary past and to the cookbooks Thompson has collected for thirty years.

The prix-fixe rotates every few months around a different vintage Thai cookbook. You might be served a 1940s palace recipe one season, a regional north-east village dish the next. Plates are designed for the table, not the camera: punchy, unapologetic Thai flavour, served family style.

A rooftop bar handles aperitifs and digestifs with Thai-spirit-led cocktails. One MICHELIN star.

Why It's Special

The most intellectually serious Thai restaurant in Bangkok — every menu is a research project rooted in a single antique cookbook.
