Blue by Alain Ducasse
About This Experience
Blue is Alain Ducasse's solo Bangkok project, opened on the river-facing first floor of the ICONLUXE wing of IconSiam. Executive chef Evens López runs the kitchen, with the Ducasse atelier system supplying technique, recipe research and sourcing standards from Paris.
The cuisine is recognisably Ducasse: precise, polished, modern French with a strong Mediterranean undercurrent. Tasting menus are anchored by classics from the wider Ducasse repertoire (the bouillabaisse-inspired course, a duck-press dish, the chocolate-and-coffee finishers) re-engineered around Andaman seafood and Thai vegetables where it makes sense.
The room itself, by Jouin Manku, is one of the most striking French dining rooms in the region: cobalt-blue lacquer, arched ceilings, full-height river windows. One MICHELIN star.
Why It's Special
