Côte by Mauro Colagreco
About This Experience
Côte transports the produce-led, garden-driven philosophy that earned Mauro Colagreco three stars at Mirazur (Menton) to a riverside dining room at Capella Bangkok. The menu reads like a love letter to the French and Italian Rivieras, with citrus, olive oil, fresh herbs and Andaman seafood replacing some of the Mediterranean catch.
Meals unfold through a Sun, Sea and Soil structure: vegetable-forward openers from Capella's farm partners, raw fish and crustaceans pulled from the Gulf and the south of France, and slow-cooked proteins finished with Riviera sauces. Service is relaxed-luxurious, in the Capella house style, with a long wine list pouring biodynamic French and Italian estates.
The room itself is one of the most atmospheric in Bangkok: floor-to-ceiling river windows, a lazily turning ceiling fan, and a quietly excellent open kitchen. Côte was promoted to two MICHELIN stars in the 2025 guide and held both stars for 2026.
