Potong
About This Experience
Potong occupies the five-story shophouse where Chef Pichaya 'Pam' Soontornyanakij's family ran a Chinese herbal pharmacy for more than a century. She kept the patina, restored the staircases, and turned the building into one of Bangkok's most atmospheric fine-dining destinations.
The twenty-course menu is built around the philosophy of five flavours, five textures, five techniques: dim sum reborn as caviar-topped tartlets, aged duck breast glazed with Chinese plum, slow-fermented tofu, traditional Teochew desserts re-engineered. Every course is a quiet conversation with her family's heritage.
Pam was named Michelin Thailand's first-ever female chef to win Opening of the Year alongside her star, and Potong is now firmly on Asia's 50 Best, drawing diners deep into Chinatown for what may be Bangkok's most narrative-driven meal.
