Signature Bangkok
About This Experience
Thierry Drapeau ran a two-MICHELIN-star restaurant in his native Vendée before relocating his project to Bangkok at VIE Hotel, an MGallery property in Ratchathewi. The cuisine is unapologetically French and built on classical jus-based sauce work, but Drapeau's signature is his use of edible flowers and delicate herbs — many sourced from boutique Thai growers — to add precise aromatic dimensions to each plate.
The Flower Bouquet set menus rotate with the seasons and have become the marquee offering. Service is limited to roughly twenty seats per evening; advance reservations are required and the kitchen plans the menu against confirmed bookings.
One MICHELIN star, retained for a fourth consecutive year in the 2026 guide.
